Henderson, NV -- The art of aromatherapy is extending into cuisine, thanks to a top chef in the Las Vegas area. Stephen Marshall, the executive chef at the Ritz Carlton Lake Las Vegas in Henderson, Nevada, has been cooking with the same herb, fruit and flower oils used by aromatherapists for years. Recently, he's developed dishes which utilize aromatherapy via a few tiny spritzes of lavender, fennel or cardamom oil applied with a perfume atomizer as the plates are served. Marshall says the addition of the super-concentrated oils enhances the dining experience through smell and taste, because they capture the flavor of an herb at its freshest and fill the air with an amazing scent. Aromatherapy cuisine is only available by special request, and the chef says he thinks it's not something for everybody. In Marshall's words, "Some may think it's a little strange."
