Modesto, CA (WFN) -- A poultry trade association has a bone to pick with retailers that are adding salted water to their chickens. The California Poultry Federation's beef with Wal-Mart Supercenters and WinCo is over the chains' practice of injecting salt water into the chicken and labeling it "enhanced." Up to 15 percent of chicken's weight is water, which the consumer ends up paying for at the cash register. Also there is concern over the excess sodium levels in consumers diets. Bill Mattos, president of the CPF, says he would like to see the word "injected" used instead of enhanced because enhanced implies the chicken is better, which in his opinion isn't the case. Although injecting water into chicken has been going on for years, the Federation is clucking their tongues now that Wal-Mart Supercenters are becoming so prolific. Mattos says his organization feels a duty to alert the consumers to the practice.
