Bloomington, IN (WFN) -- Chew on this: The author of a new low-carb barbecue cookbook ate nothing but barbecue for an entire summer. Dana Carpender, whose recipes appear in "The Low-Carb Barbecue Book" (Fair Winds), says she and her husband had to eat barbecue for breakfast to get rid of the leftovers from her numerous recipe tests. She's not complaining though. She now a born-again beef spare-ribs lover. Although she may have had to eat a lot of meat, one major misconception about low-carb diets is that it's a diet of bacon and butter. Carpender says the reality is, her readers tell her they've never eaten so many vegetables in their lives. Instead of eating a steak with a potato, says Carpender, they ask for a salad instead. If carb-cutters still crave potatoes, she says her Southwestern Un-potato Salad made with cauliflower instead of potatoes can fool people at least until the third or fourth bite.
